Home made……..I love those 2 words. Ice cream? Also 2 really great words. What about, no churn? and…..3 ingredient !
I stumbled across this idea of making your own no churn ice cream and was highly intrigued. For one, I don’t have an ice cream maker and secondly, it’s hard to come by really good ice cream where I live in Africa or at least any that hasn’t already been thawed and refrozen.
So, in my efforts to make the most of the hundreds of mangoes falling of our tree, I decided to give it a go. Did I mention there are only 3 ingredients?
Here is just a glimpse of the many fallen mangoes from our tree We would pick up buckets of them – many found their way to the compost heap as they were in various stages of decay. Some made it into mango jam , many were given away and handfuls were eaten picked right off the tree.

So I went about gathering up a basketful feeling very cheery about my new adventure, my sustainable tropical fruity life and eager to get started. While I was at it I walked over to the avocado tree and picked these beauties….they are so unbelievably shiny and perfect looking . The trick is figuring out WHEN to pick them and so very many fall to the ground ( those never seem to taste right) and these fresh picked ones took FOREVER to ripen. Still trying to figure that all out. ANY TIPS? Do leave a comment. I know some of the my other fellow bloggers have avo trees.
Then began my tree to freezer recipe. As this recipe only calls for 3 ingredients I now had my mangoes fresh picked from our tree and now I needed: fresh cream which I had picked up that morning along with our regular order of raw milk and butter. SO tasty and creamy from their gorgeous jersey cows. And the other ingredient was sweetened condensed milk which I didn’t dare keep in my cupboard. Back in my early single days of living in my own apartment I sometimes just ate spoonfuls of that or dipped graham crackers into it. Good grief….. the memories. So I ran to the store for that.
Now with all my ingredients assembled I started to peel and slice the mangoes. These variety of mango are not real sliceable bur rather more mushable and stringy – I did my best. Being able to find nice firm mangoes and using an immersion blender would be the ultimate best for mangoe puree purposes. Ultimately I wanted to get 2 cups worth of puree.
I mashed it around with a fork and then added it to a bowl with the sweetened condensed cream and stirred it all together. Then I whipped up the lovely cream until soft peaks formed and added the sweetened puree and gently folded it all together until it appeared as just a slightly orangy tinged cream with beautiful flecks of mango swirling around. IT was time to pour it all into a tin and off to the freezer.
So that was quite easy really and probably only took me a total of 30 minutes. The hardest part was just peeling the sticky mangoes ! Not bad at all. I was very pleased with how this was going so far. So now all we really had to do was wait. And I kinda forgot about it but THEN a few days later we brought it out and gave it a try.
YUM! It was delicious – very creamy and a lovely mango flavor that wasn’t at all overpowering. In fact, I think I’d like it a bit stronger – might have to play around with that. My only complaint is that the mangoes I used were a bit stringy and I didn’t have the immersion blender to really get that pulp smooth but it tastes so good that it was just a little detail with an easy remedy for the next batch.
And the most amazing thing of all – you could make this ice cream with practically ANY fruit or even chocolate? HOORAY! I am definitely a fan of 3 ingredient, no churn ice cream all the way from tree to freezer!

Mango ice cream - no churn
Anyone can make this easy 3 ingredient recipe for no churn mango ice cream. Mango could be substitutred with any fruit. Enjoy!
Ingredients
- 2 cups mango puree
- 2 cups whipping cream
- 1 can sweetened condensed milk
Instructions

Gather your mangoes or fruit of choice or purchase from the store. You'll need enough to make 2 cups of fruit puree.

Whip the 2 cups cream until soft peaks form!

Combine mango puree with sweetened milk then fold into the whipped cream until all 3 ingredients are incorporated.

Pour ice cream mixture into a freezer safe tin such as a bread loaf pan. Place in freezer for a minimum of 8 hours. Cover with foil.

Remove from freezer, scoop and delight in your easy and delicious 3 ingredient, no churn ice cream. Enjoy!
Yes, I’ve made this before, but used different fruit. It works great. If you want to make a different freeze ice cream I have the the old Betty Crocker recipe, where you cook eggs and milk and sugar just until thickened then mix with freshly whipped cream, fruit oand flavorings. However, instead of churning . You take it out of the freezer every 30 minutes for the first few hours to mix it so it doesn’t separate. That is awesome ice cream as well .

This sounds amazing. I love Mangoes!! I am definitely going this a try. I know blending frozen bananas can also make a nice ice cream. Maybe mixing the two together?!?!
