There is alot of confusion about eggs. This is why I love my motto in life of getting ” back to basics”. It’s far simpler. And almost always healthier!
100 years ago no one questioned their eggs. There wasn’t any terminology such as cage-free vs free-range. Now we seek out PASTURE-RAISED ! What does that even mean? I found this article on all the chicken egg varieties which is helpful. Honestly, the easiest way to learn it for yourself is just to test it out.
Typically your cheapest store bought no label egg will have a weak shell, very pale yolk and be quite watery and in stark contrast your home grown pasture-raised egg will have a thick, hard shell with a deep golden to orangey colored yolk !
The difference? NUTRIENTS ( by way of insects and worms and weeds), SUN, FRESH AIR !
Our son won’t even eat your basic store bought egg. This makes me really happy because all our kids KNOW where eggs come from and the joy there is in raising the chicks into egg layers and the satisfaction one gets from going out in the yard to get the days egg collection ! Alot of people don’t even know ( I didn’t before I became an egg grower myself) that the it takes 6 months for a newly hatched chick to mature into an egg layer.
And I will clue you in to a farmers secret ~ those first laid eggs are pretty tiny but just as tasty. In our house it is always a competition to be the first one to find the newly laid first little egg. Then that lucky duck ( or chicken? haha) gets to fry up their own tiny egg for a snack.
I wish the only way anyone could have eggs was to raise their own laying hens or to buy from a neighbor. We could throw out the labels and all get back to basics. When I was newly married we lived in a small farming village in Germany and I was able to ride my bike to a local family and pick up fresh eggs from her front door. This is true in America too and I applaud all those little signs which say ” FRESH EGGS HERE”. If you don’t have your own chickens – stop by one day at one of those front doors and see and taste the difference.
We are currently raising 15 hens – 10 are still in small chick size and 5 are growing steadily – I hope to see our first egg by May !! We also raise meat birds – these are a different breed which are specifically bred to produce fat juicy birds ready for harvest within 8 – 10 weeks. And we have ducks 🙂 As soon as we can figure out which are female – we’ll harvest the males for meat and keep the females for eggs.
There is a certain satisfaction in harvesting our own home grown back yard meat !! I suppose it’s not for everyone and these days it’s also not necessary – but I do believe it is valuable to learn and experience where our eggs and meat come from. As a teacher, I often asked my students who dutifully replied ” from the store” – some know ~ usually those with farm experience.

I encourage you to get some backyard chickens – egg layers. Head out to your local farm store in the spring and at least have a look at the different varieties of chicks SO CUTE and so valuable.
