I love cooking ! The planning, slicing, dicing, preparing and the final result – all of it. So when the garden harvest is bursting it’s time for one of the best sheet pan dinners
I’m not great at planning ahead and alot of my GREAT food ideas come up at 6 pm and then when I start in we eat at 8 or later. The kids keep saying ” MOM, most families eat at 5 pm”. I say…….” ALOT of families eat on the go, in the drive-thru or open up a package.” Trying to have a teaching moment in appreciation of real food, home grown food.
AND, I’m generalizing of course. I know not everyone eats fast food or processed food but I want my kids to know and appreciate the satisfaction of preparing and cooking from scratch and that the flavors and nutrition it provides are worth the wait for dinner. Sheet pans are my best friend. You can throw SO MUCH onto a sheet pan and let it roast to perfection while finishing up the laundry, homework with the kids, walking outside to enjoy that last colors of sunset with a glass of wine while breathing in the scent of the night air.
The colors of fall just now as the last of the veggie ripen in the garden make for the best sheet pan dinners and healthy fall recipes. Interested to read about the daily harvest at African Garden……maybe you’ll be inspired to plant something that you can harvest in a few months too.
Today I want to show you how to make sausage and peppers and others veggies on an all in one sheet pan recipe. Easy to throw together and limited clean up. WIN WIN !
All of my recipes that call for seasonings will always include REAL salt – and freshly ground peppercorns. These are must have’s in my cookbook. The fresh taste is so pungent and the nutritional value soars above the rest. This pepper grinder is the one I use. Check them out at the highlited links. Even better, when you are placing real food on your sheet pan that you grew with your own well worn hands I believe the food tastes even better. This particular sheetpan sausage and veggie recipe came courtesy of a local farmers market and some uncured sausage at a local store – easy, delicious, nutritious. The combinations are endless. Leave out some of the veg, add more, omit the sausage for a vegetarian version.
**BONUS** Lots of organic scraps for the compost, lots of scraps for the chickens and ducks at our house.

Sheet pan sausage and veggies
Home-grown or local veg and meat piled onto 1 pan and drizzled with oils and spices ! YUM!
- 1 butternut
- 2-3 sweet peppers
- 1-2 onions
- 4-6 uncured sausages
- pinch salt and pepper
- drizzle olive oil
Peel, scoop out seeds, and dice 1 butternut into same sized chunks
Scoop out seeds of sweet peppers and dice into chunks
Peel and slice onions into chunks
Slice uncured sausages into chunks
Add veg and meat onto sheet pan and drizzle with olive oil, season with real salt and freshly groundpepper to taste !
Roast at 425 F until browned and tender - ENJOY !
**Omit meat for vegetarian and/or add additional toppings such as shaved parmesan, curry and tumeric !
